These quick and easy Irish soda bread muffins capture the traditional flavors of Irish soda bread in a convenient muffin form. They’re perfect for breakfast, snacks, or anytime you crave a comforting, homemade treat.
Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 tablespoon white sugar
– 1/4 cup unsalted butter, melted
– 1 cup buttermilk
– 1 egg
– 1 teaspoon caraway seeds (optional)
Instructions
1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
2. In a large bowl, whisk together the flour, baking soda, salt, and sugar.
3. In a separate bowl, combine the melted butter, buttermilk, and egg.
4. Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.
5. Fold in the caraway seeds, if using.
6. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.
7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For a sweeter muffin, you can add an extra tablespoon or two of sugar. Substitute raisins or currants for the caraway seeds if desired.
