Ingredients
– 2 pounds boneless, skinless chicken breasts
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 1 red onion, diced
– 1 cup sliced black olives
– 1 pint cherry tomatoes, halved
– 1 cup Italian dressing
– 1/4 cup chopped fresh parsley
– 1 teaspoon dried oregano
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
Instructions
1. In a large pot, bring salted water to a boil. Add the chicken breasts and cook for 15-20 minutes, or until fully cooked through.
2. Remove the cooked chicken from the pot and let it cool slightly. Once cooled, shred or dice the chicken into bite-sized pieces.
3. In a large bowl, combine the shredded chicken, diced bell peppers, onion, olives, and cherry tomatoes.
4. In a small bowl, whisk together the Italian dressing, parsley, oregano, and garlic powder.
5. Pour the dressing over the chicken and vegetable mixture and toss gently to coat evenly.
6. Season with salt and pepper to taste.
