Description

Bursting with bright, tangy lemon flavor, this easy Italian Lemon Jam comes together in just 30 minutes. Spread it on toast, scones, or use it in baking for a taste of Italy in every bite.


Ingredients

– 4 lemons, juiced (about 1/2 cup lemon juice)

– 1 cup granulated sugar

– 1 tablespoon lemon zest


Instructions

1. In a small saucepan, combine the lemon juice and sugar. Bring to a simmer over medium heat, stirring frequently, until the sugar has fully dissolved.

2. Continue simmering, stirring occasionally, for 20-25 minutes or until the mixture has thickened to a jam-like consistency.

3. Remove from heat and stir in the lemon zest. Allow to cool slightly before transferring to a clean jar or airtight container.

4. Store the Italian Lemon Jam in the refrigerator for up to 2 weeks.

Notes

For a thicker jam, simmer for a few minutes longer. The jam will continue to thicken as it cools. Adjust sweetness to taste by adding more or less sugar. Use the jam on toast, scones, in baked goods, or as a topping for cheesecake.
