Ingredients

– 1 pound Italian sausage, casings removed

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups low-sodium chicken broth

– 2 cups heavy cream

– 2 large russet potatoes, peeled and cubed

– 2 cups kale, chopped

– 1 teaspoon dried thyme

– 1/2 teaspoon red pepper flakes

– Salt and black pepper to taste


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large oven-safe skillet or Dutch oven, cook the Italian sausage over medium-high heat until browned, breaking it up as it cooks.

3. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent, about 5 minutes.

4. Pour in the chicken broth and heavy cream, then stir in the cubed potatoes, chopped kale, dried thyme, and red pepper flakes. Season with salt and black pepper to taste.

5. Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the potatoes are tender and the casserole is bubbly and golden brown on top.

6. Remove the casserole from the oven and let it cool for 5 minutes before serving.

Notes

For a creamier texture, you can use half-and-half in place of the heavy cream. You can also add other vegetables like spinach, bell peppers, or carrots to the casserole. Serve with crusty bread for dipping.
