Description

Jalapeño Peanut Brittle is a quick and easy homemade treat that combines the perfect balance of heat and crunch. This spicy-sweet candy is made with roasted peanuts, sugar, and a generous amount of diced jalapeño peppers for a delightful kick.


Ingredients

– 1 cup granulated sugar

– 1/2 cup light corn syrup

– 1/4 cup unsalted butter

– 1/4 teaspoon baking soda

– 2 cups roasted, salted peanuts

– 2 jalapeño peppers, seeded and finely diced


Instructions

1. Line a baking sheet with parchment paper or a silicone baking mat.

2. In a medium saucepan, combine the sugar, corn syrup, and butter. Heat over medium, stirring constantly, until the mixture reaches 300°F on a candy thermometer.

3. Remove the pan from the heat and quickly stir in the baking soda. The mixture will foam up.

4. Immediately stir in the peanuts and diced jalapeños until well combined.

5. Quickly pour the brittle mixture onto the prepared baking sheet, spreading it out as thin as possible.

6. Allow the brittle to cool completely, about 30 minutes.

7. Break the brittle into pieces and enjoy!

Notes

– For a milder heat, use only 1 jalapeño pepper.

– Store the Jalapeño Peanut Brittle in an airtight container at room temperature for up to 2 weeks.
