Ingredients

– 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tablespoon grated fresh ginger

– 2 tablespoons curry powder

– 1 teaspoon ground cumin

– 1 teaspoon paprika

– 1/2 teaspoon cayenne pepper (or to taste)

– 1 cup coconut milk

– 1 cup chicken broth

– 1 tablespoon brown sugar

– 1 tablespoon lime juice

– Salt and black pepper to taste

– Chopped fresh cilantro for garnish


Instructions

1. In a large skillet or Dutch oven, heat a drizzle of oil over medium-high heat.

2. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pan and set aside.

3. Reduce the heat to medium and add the diced onion to the pan. Cook for 2-3 minutes, stirring occasionally, until the onion is translucent.

4. Add the garlic and grated ginger and cook for an additional minute, until fragrant.

5. Stir in the curry powder, cumin, paprika, and cayenne pepper. Cook for 1 minute, stirring constantly, to toast the spices.

6. Pour in the coconut milk and chicken broth, and add the brown sugar and lime juice. Bring the mixture to a simmer.

7. Return the cooked chicken to the pan and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

8. Taste and adjust seasoning with salt and black pepper as needed.

9. Serve the Jamaican Curry Chicken over steamed rice, garnished with fresh chopped cilantro.

Notes

For a spicier version, increase the amount of cayenne pepper. You can also add diced potatoes or bell peppers to the dish for extra veggies. The sauce can be made ahead of time and reheated with the chicken for a quick weeknight meal.
