Ingredients
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 1/2 cup almond flour
– 2 large eggs
– 1 teaspoon Italian seasoning
– 1/4 teaspoon garlic powder
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
– 24 slices of pepperoni, halved
Instructions
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a medium-sized bowl, combine the mozzarella cheese, Parmesan cheese, almond flour, eggs, Italian seasoning, garlic powder, salt, and black pepper. Mix well until a dough-like consistency forms.
3. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about an inch apart.
4. Gently press a halved pepperoni slice onto the top of each dough ball.
5. Bake for 15-18 minutes, or until the bites are golden brown and the cheese is melted.
6. Remove from the oven and let cool for a few minutes before serving.
Notes
For extra flavor, you can sprinkle a bit of additional Parmesan cheese or Italian seasoning on top of the bites before baking. These bites can be stored in the refrigerator for up to 5 days and reheated in the oven or air fryer before serving.
