Juicy, flavorful Key West Grilled Chicken marinated in a bright, tropical citrus blend for a burst of bold, tangy flavor in every bite.
Ingredients
– 4 boneless, skinless chicken breasts
– 1/2 cup fresh orange juice
– 1/4 cup fresh lime juice
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1/2 teaspoon chili powder
– 1/4 teaspoon cayenne pepper
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Instructions
1. In a large resealable bag or shallow baking dish, combine the orange juice, lime juice, olive oil, garlic, cumin, chili powder, cayenne, salt, and pepper. Add the chicken breasts and turn to coat. Cover and marinate in the refrigerator for 30 minutes to 1 hour.
2. Preheat the grill to medium-high heat.
3. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F.
4. Transfer the grilled chicken to a serving platter and let rest for 5 minutes. Serve hot, garnished with fresh citrus slices and chopped cilantro, if desired.
Notes
For extra flavor, you can also grill some pineapple or mango slices alongside the chicken. The tropical citrus marinade works great with chicken, pork, or shrimp.
