Ingredients
– 1 cup Kodiak Cakes Flapjack & Waffle Mix
– 1 cup pumpkin puree
– 2 eggs
– 1/4 cup vegetable oil
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon ground nutmeg
Instructions
1. 1. Preheat oven to 375°F and grease a 12-cup muffin tin.
2. 2. In a medium bowl, whisk together the Kodiak Cakes mix, pumpkin puree, eggs, oil, cinnamon, ginger, and nutmeg until well combined.
3. 3. Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
4. 4. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
5. 5. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For a sweeter muffin, add 1/4 cup brown sugar to the batter. You can also top the muffins with a streusel topping or a cream cheese frosting. Store leftover muffins in an airtight container at room temperature for up to 3 days, or in the freezer for up to 3 months.
