Ingredients

– 1 pound beef sirloin, thinly sliced

– 1 onion, thinly sliced

– 3 cloves garlic, minced

– 1 tablespoon grated fresh ginger

– 1/4 cup soy sauce

– 2 tablespoons brown sugar

– 1 teaspoon sesame oil

– 1/2 teaspoon ground black pepper

– 4 cups beef broth

– 2 carrots, peeled and sliced

– 2 cups chopped cabbage

– 2 green onions, sliced

– Cooked rice, for serving


Instructions

1. In a large pot or Dutch oven, combine the sliced beef, onion, garlic, and ginger.

2. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, and black pepper. Pour the mixture over the beef and vegetables, and stir to coat.

3. Add the beef broth and bring the mixture to a boil. Reduce the heat and simmer for 30 minutes, or until the beef is tender.

4. Stir in the sliced carrots and chopped cabbage. Cook for an additional 10 minutes, or until the vegetables are tender.

5. Remove from heat and garnish with sliced green onions.

6. Serve the Korean Beef Bulgogi Stew warm over steamed rice.

Notes

For a spicier stew, add a tablespoon of gochujang (Korean red chili paste) to the sauce. You can also customize the vegetables to your liking, such as adding mushrooms or spinach.
