Ingredients

– 1 pound ground beef

– 2 cups cooked white rice

– 1 cup kimchi, chopped

– 1 cup shredded cabbage

– 1 cup shredded carrots

– 1/2 cup sliced green onions

– 2 tablespoons gochujang (Korean chili paste)

– 1 tablespoon sriracha

– 6 large tortillas

– 1/4 cup soy sauce

– 2 tablespoons sesame oil

– 1 tablespoon rice vinegar

– 1 teaspoon garlic powder

– 1 teaspoon ground ginger

– Salt and pepper to taste


Instructions

1. In a large skillet, cook the ground beef over medium-high heat, breaking it up as it cooks, until browned and cooked through, about 5-7 minutes.

2. Drain any excess fat from the skillet, then add the cooked rice, kimchi, cabbage, carrots, and green onions. Stir to combine.

3. In a small bowl, whisk together the gochujang, sriracha, soy sauce, sesame oil, rice vinegar, garlic powder, and ground ginger. Pour the sauce over the beef and vegetable mixture, and stir to coat everything evenly.

4. Warm the tortillas according to package instructions.

5. Scoop a portion of the Korean-style filling onto the center of each tortilla. Fold the bottom of the tortilla up, then fold in the sides and roll up tightly to create a burrito.

6. Serve the Korean-Style Burritos immediately, garnished with additional kimchi, green onions, or your desired toppings.

Notes

For a spicier version, increase the amount of gochujang or sriracha. You can also add other favorite burrito toppings like avocado, cheese, or sour cream.
