Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 2 cans (28 oz each) crushed tomatoes
– 4 cups beef or chicken broth
– 2 cups water
– 2 tsp dried oregano
– 1 tsp dried basil
– 1/2 tsp red pepper flakes (optional)
– 8 oz lasagna noodles, broken into 1-inch pieces
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
Instructions
1. 1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain any excess fat.
2. 2. Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes, stirring frequently, until the onion is translucent.
3. 3. Pour in the crushed tomatoes, beef or chicken broth, and water. Stir in the dried oregano, basil, and red pepper flakes (if using).
4. 4. Bring the soup to a boil, then reduce the heat and simmer for 10 minutes.
5. 5. Add the broken lasagna noodles to the pot and continue simmering for 15-20 minutes, or until the pasta is tender.
