Description

This Lemon Asparagus Pasta is a quick, easy, and incredibly tasty dish that’s perfect for a weeknight dinner. The bright, zesty lemon sauce complements the tender asparagus and al dente pasta perfectly, creating a meal that’s both nutritious and delicious.


Ingredients

8 ounces linguine or fettuccine pasta

1 pound asparagus, trimmed and cut into 1-inch pieces

2 tablespoons olive oil

3 garlic cloves, minced

1/2 cup freshly grated Parmesan cheese, plus more for serving

1/4 cup freshly squeezed lemon juice (about 2 lemons)

Zest of 1 lemon

Salt and freshly ground black pepper to taste


Instructions

1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat the olive oil over medium-high heat. Add the asparagus and sauté for 3-4 minutes, until crisp-tender.

3. Add the garlic and cook for 1 minute, until fragrant.

4. Add the cooked pasta, Parmesan cheese, lemon juice, and lemon zest to the skillet. Toss to combine and heat through, about 2-3 minutes.

5. Season with salt and pepper to taste.

6. Serve the Lemon Asparagus Pasta immediately, garnished with additional Parmesan cheese if desired.

Notes

For a richer sauce, you can stir in a tablespoon or two of butter at the end. You can also add some grilled or sautéed chicken or shrimp to make it a heartier main dish. Leftovers can be stored in the refrigerator for up to 3 days.
