Ingredients
– 1/4 cup chia seeds
– 2 cups unsweetened almond milk
– 1/2 cup plain Greek yogurt
– 1/4 cup honey
– 2 tablespoons lemon juice
– 1 tablespoon lemon zest
Instructions
1. – In a medium bowl, whisk together the chia seeds and almond milk. Let sit for 5 minutes, stirring occasionally, until thickened.
2. – Add the Greek yogurt, honey, lemon juice, and lemon zest. Stir until well combined.
3. – Transfer the chia pudding to individual serving cups or a larger container. Refrigerate for at least 2 hours, or until completely set.

Notes
For a thicker consistency, use 1/3 cup chia seeds. You can also substitute regular milk or coconut milk for the almond milk. Top with your favorite fresh fruit, nuts, or a drizzle of extra honey.
