Ingredients
– 1 cup brown lentils, rinsed
– 2 cups vegetable broth
– 1 tablespoon olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 teaspoons ground cinnamon
– 2 tablespoons brown sugar
– 1/4 cup chopped fresh parsley
– Salt and pepper to taste
Instructions
1. In a medium saucepan, bring the lentils and vegetable broth to a boil over high heat. Reduce heat to low, cover, and simmer for 15-20 minutes, until lentils are tender.
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes, until translucent.
3. Add the minced garlic and sauté for 1 minute, until fragrant.
4. Drain the cooked lentils and add them to the skillet with the onions and garlic. Stir in the ground cinnamon and brown sugar, and season with salt and pepper to taste.
5. Cook for an additional 5 minutes, stirring occasionally, until the lentils are coated in the cinnamon brown sugar sauce.
6. Remove from heat and stir in the chopped fresh parsley.
7. Serve hot, alongside basmati rice or your favorite side dish.
