Ingredients
– 6 lemons, zested
– 1 cup vodka
– 1 cup white sugar
– 1 cup water
Instructions
1. – In a large glass jar or bottle, combine the lemon zest and vodka. Seal and let infuse for 7-10 days, shaking occasionally.
2. – In a small saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar has dissolved. Allow to cool completely.
3. – Strain the infused vodka through a fine-mesh sieve, discarding the lemon zest.
4. – Stir the cooled sugar syrup into the infused vodka.
5. – Transfer the limoncello to a clean bottle or jar and refrigerate for at least 2 hours before serving.
Notes
For best results, use freshly zested lemon peels. Avoid the white pith, as it can make the limoncello taste bitter. The longer the vodka infuses, the more intense the lemon flavor will be.
