Ingredients

– 4 pounds russet potatoes, peeled and diced

– 1 onion, diced

– 4 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 2 cups milk

– 1 cup heavy cream

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 8 slices bacon, cooked and crumbled

– 1 cup shredded cheddar cheese

– 1/2 cup chopped scallions

– 1/2 cup sour cream


Instructions

1. – In a large pot, combine the diced potatoes, onion, and garlic. Pour in the broth and bring to a boil.

2. – Reduce heat and simmer for 15-20 minutes, until the potatoes are tender.

3. – Using an immersion blender, blend the soup until smooth and creamy.

4. – Stir in the milk, heavy cream, salt, and pepper. Heat through, but do not boil.

5. – Ladle the soup into bowls and top with crumbled bacon, shredded cheddar cheese, chopped scallions, and a dollop of sour cream.
