Ingredients

– 1 lb ground beef

– 1 packet taco seasoning

– 1 (15 oz) can enchilada sauce

– 8 flour tortillas

– 2 cups shredded cheddar cheese

– Chopped fresh cilantro (for garnish)


Instructions

1. – Preheat oven to 375°F.

2. – In a large skillet, cook the ground beef over medium-high heat, breaking it up as it cooks, until no longer pink, about 5-7 minutes.

3. – Drain any excess fat, then stir in the taco seasoning and enchilada sauce.

4. – Spread a thin layer of the beef mixture down the center of each tortilla.

5. – Roll up the tortillas and place seam-side down in a baking dish.

6. – Sprinkle the shredded cheese over the top of the enchiladas.

7. – Bake for 10-12 minutes, or until the cheese is melted and bubbly.

8. – Garnish with chopped fresh cilantro before serving.
