Ingredients
– 1 pound elbow macaroni
– 4 tablespoons unsalted butter
– 4 tablespoons all-purpose flour
– 3 cups whole milk
– 2 cups shredded cheddar cheese
– 1 cup shredded gruyere cheese
– 1 pound cooked lobster meat, roughly chopped
– 1 teaspoon salt
– 1/2 teaspoon ground black pepper
Instructions
1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
2. In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 2 minutes, stirring constantly, to create a roux.
3. Gradually whisk in the milk, stirring continuously to prevent lumps. Bring the mixture to a simmer and cook until thickened, about 5 minutes.
4. Remove the saucepan from heat and stir in the cheddar and gruyere cheeses until melted and smooth.
5. Add the cooked macaroni and lobster meat to the cheese sauce, and stir to combine. Season with salt and pepper.
6. Serve the Lobster Mac and Cheese hot, garnished with fresh parsley or chives if desired.
Notes
For extra richness, you can add a tablespoon of heavy cream to the cheese sauce. Grated parmesan cheese or panko breadcrumbs also make a nice topping.
