Description

Ingredients

– 2 cups all-purpose flour

– 1 teaspoon salt

– 3/4 cup unsalted butter, chilled and cubed

– 1/4 cup ice water

– 2 cups fresh strawberries, diced

– 1/2 cup granulated sugar

– 2 tablespoons cornstarch

– 1 egg, beaten

– 2 tablespoons coarse sugar (for topping)


Instructions

1. In a food processor, pulse the flour and salt until combined. Add the chilled butter and pulse until mixture resembles coarse crumbs. Gradually add the ice water and pulse until the dough just begins to come together.

2. Turn the dough out onto a lightly floured surface and gently knead a few times. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

3. In a medium bowl, combine the diced strawberries, granulated sugar, and cornstarch. Mix well and set aside.

4. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

5. On a lightly floured surface, roll out one disk of dough to 1/8-inch thickness. Cut into heart shapes using a 4-inch cookie cutter.

6. Place the heart shapes on the prepared baking sheet, spacing them about 1 inch apart. Spoon about 1-2 tablespoons of the strawberry mixture onto the center of each heart.

7. Roll out the remaining dough and cut out more heart shapes. Place a top heart shape over the filling and crimp the edges with a fork to seal.

8. Brush the tops of the hand pies with the beaten egg and sprinkle with coarse sugar.

9. Bake for 18-20 minutes, or until the crust is golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

These hand pies can be stored in an airtight container at room temperature for up to 3 days. For a flakier crust, you can refrigerate the dough for up to 3 days before rolling and assembling the pies.
