Description

Tender, caramelized roasted carrots are smothered in a sweet and savory maple bacon glaze in this irresistible side dish. The combination of the earthy carrots, salty bacon, and rich maple syrup creates a perfectly balanced and comforting flavor profile that the whole family will love.

Ingredients

– 2 pounds carrots, peeled and cut into 1-inch pieces

– 6 slices bacon, chopped

– 1/4 cup maple syrup

– 2 tablespoons unsalted butter, melted

– 1 teaspoon garlic powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.

2. In a large bowl, toss the carrot pieces with the chopped bacon, maple syrup, melted butter, garlic powder, salt, and pepper until well coated.

3. Spread the carrot mixture in a single layer on the prepared baking sheet.

4. Roast for 25-30 minutes, stirring halfway, until the carrots are tender and the bacon is crispy.

5. Serve the Maple Bacon Carrots hot, garnished with additional chopped bacon or fresh parsley if desired.

Notes

For a sweeter glaze, increase the maple syrup to 1/3 cup. You can also use honey instead of maple syrup. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
