Ingredients
– 2 pounds parsnips, peeled and cut into 1-inch pieces
– 2 tablespoons olive oil
– 3 tablespoons pure maple syrup
– 1 tablespoon fresh thyme leaves, plus more for garnish
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
2. In a large bowl, toss the parsnip pieces with the olive oil, maple syrup, thyme leaves, salt, and pepper until evenly coated.
3. Spread the parsnips in a single layer on the prepared baking sheet.
4. Roast for 25-30 minutes, flipping halfway, until the parsnips are tender and caramelized.
5. Garnish with additional fresh thyme leaves and serve immediately.
