Ingredients

– 2 pounds parsnips, peeled and cut into 1-inch pieces

– 3 tablespoons pure maple syrup

– 1 tablespoon fresh thyme leaves, plus more for garnish

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper.

2. In a large bowl, toss the parsnip pieces with the olive oil, maple syrup, thyme leaves, salt, and pepper until evenly coated.
