Ingredients

– 2 1/4 cups all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 3/4 cup packed brown sugar

– 2 large eggs

– 2 teaspoons vanilla extract

– 1 cup maraschino cherries, drained and chopped

– 1 1/2 cups semi-sweet chocolate chips


Instructions

1. Preheat oven to 375°F. Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

3. In a large bowl, beat the butter and sugars until light and fluffy, about 2-3 minutes.

4. Beat in the eggs one at a time, then stir in the vanilla.

5. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chopped maraschino cherries and chocolate chips.

6. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

7. Bake for 10-12 minutes, until the edges are lightly golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a chunkier cookie, use coarsely chopped maraschino cherries. You can also add a touch of almond extract for extra flavor.
