Description

Ingredients

– 1 head of cauliflower, cut into bite-sized florets

– 1/4 cup olive oil

– 1/4 cup red wine vinegar

– 2 tablespoons fresh parsley, chopped

– 1 tablespoon fresh oregano, chopped

– 1 teaspoon Dijon mustard

– 1 garlic clove, minced

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Steam the cauliflower florets until tender, but still slightly firm, about 5-7 minutes. Drain and let cool.

2. In a large bowl, whisk together the olive oil, red wine vinegar, parsley, oregano, Dijon mustard, garlic, salt, and black pepper.

3. Add the cooled cauliflower florets to the dressing and toss gently to coat.

4. Cover and refrigerate for at least 30 minutes, or up to 24 hours, to allow the flavors to meld.

5. Serve chilled or at room temperature. Enjoy!

Notes

This salad can be made ahead of time and kept in the refrigerator for up to 3 days. The longer it marinates, the more flavorful it becomes. You can also add diced bell peppers, sliced olives, or crumbled feta cheese for extra flavor and texture.
