Description

This Marinated Cilantro Lime Bean Salad is a vibrant and flavorful side dish that’s perfect for any occasion. Made with a variety of tender beans, fresh cilantro, and a tangy lime dressing, it’s a refreshing and healthy addition to your meal.

Ingredients

– 2 cans (15 oz each) mixed beans, drained and rinsed

– 1 cup fresh cilantro, chopped

– 2 tablespoons olive oil

– 2 tablespoons lime juice (about 1 lime)

– 1 tablespoon white vinegar

– 1 teaspoon honey

– 1/2 teaspoon garlic powder

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. In a large bowl, combine the drained and rinsed mixed beans.

2. In a small bowl, whisk together the olive oil, lime juice, vinegar, honey, garlic powder, salt, and black pepper to make the dressing.

3. Pour the dressing over the beans and toss gently to coat.

4. Stir in the chopped cilantro until well combined.

5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

6. Serve chilled or at room temperature.

Notes

For best results, let the salad marinate for at least 30 minutes to allow the flavors to fully develop. You can use any combination of beans, such as kidney, garbanzo, or black beans. Adjust the amount of cilantro to your personal taste preference.
