Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 24 miniature marshmallows
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
3. In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. Scoop the dough by the tablespoonful and roll into balls. Place a marshmallow in the center of each dough ball, then roll the dough around the marshmallow to fully enclose it.
6. Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.
7. Bake for 8-10 minutes, or until the cookies are set and the marshmallows have softened.
8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a more intense chocolate flavor, you can use dark cocoa powder instead of unsweetened. You can also try using different flavors of marshmallows, such as vanilla or chocolate, for a unique twist.
