Description

This Mediterranean Marinated Cauliflower Salad is a refreshing and flavorful side dish that’s perfect for warm weather. Tender cauliflower florets are marinated in a tangy olive oil and vinegar dressing, then tossed with briny olives, fragrant herbs, and a sprinkle of Parmesan cheese for a delightful taste of the Mediterranean.


Ingredients

– 1 head of cauliflower, cut into bite-sized florets

– 1/4 cup olive oil

– 2 tablespoons red wine vinegar

– 1 tablespoon lemon juice

– 2 cloves garlic, minced

– 1 teaspoon dried oregano

– 1/2 teaspoon dried basil

– 1/4 teaspoon red pepper flakes (optional)

– 1/2 cup pitted Kalamata olives, halved

– 1/4 cup grated Parmesan cheese

– Salt and pepper to taste


Instructions

1. – In a large bowl, whisk together the olive oil, vinegar, lemon juice, garlic, oregano, basil, and red pepper flakes (if using).

2. – Add the cauliflower florets and toss to coat evenly with the dressing.

3. – Cover and refrigerate for at least 30 minutes, or up to 24 hours, to allow the flavors to meld.

4. – When ready to serve, stir in the Kalamata olives and Parmesan cheese. Season with salt and pepper to taste.

5. – Serve chilled or at room temperature as a refreshing side dish.

Notes

– For a heartier salad, you can add diced cucumber, cherry tomatoes, or crumbled feta cheese.
