Description

Ingredients

– 1 pound ground beef

– 1 cup panko breadcrumbs

– 2 eggs, beaten

– 1/2 cup finely chopped onion

– 3 cloves garlic, minced

– 1 teaspoon dried oregano

– 1 teaspoon dried basil

– 1/2 teaspoon ground coriander

– 1/2 teaspoon ground cumin

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup heavy cream

– 1/4 cup grated Parmesan cheese

– 2 tablespoons chopped fresh parsley


Instructions

1. Preheat the oven to 375°F (190°C).

2. In a large bowl, combine the ground beef, panko breadcrumbs, beaten eggs, onion, garlic, oregano, basil, coriander, cumin, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

3. Transfer the mixture to a 9×5-inch loaf pan and shape it into a compact loaf.

4. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).

5. Meanwhile, in a small saucepan, combine the heavy cream, Parmesan cheese, and chopped parsley. Cook over medium heat, stirring occasionally, until the sauce thickens slightly, about 5-7 minutes.

6. Remove the meatloaf from the oven and let it rest for 5 minutes. Slice the meatloaf and drizzle the warm garlic herb sauce over the top.

7. Serve the Mediterranean Meatloaf with the garlic herb sauce, accompanied by your favorite sides, such as roasted vegetables or a fresh salad.

Notes

For a spicier version, you can add a pinch of red pepper flakes to the meatloaf mixture or the garlic herb sauce. You can also use ground turkey or chicken instead of beef for a leaner option.
