Description

This easy Mediterranean One Pot Pasta features al dente penne noodles tossed in a vibrant tomato and herb sauce for a quick, flavor-packed weeknight dinner.


Ingredients

– 1 lb penne pasta

– 1 tbsp olive oil

– 3 cloves garlic, minced

– 1 (28 oz) can diced tomatoes

– 1 cup vegetable broth

– 1 tsp dried oregano

– 1/2 tsp dried basil

– 1/4 tsp red pepper flakes (optional)

– 1/2 cup freshly grated parmesan cheese, plus more for serving

– Fresh basil leaves, for garnish


Instructions

1. 1. Bring a large pot of salted water to a boil. Cook the penne according to package instructions until al dente. Drain and set aside.

2. 2. In the same pot, heat the olive oil over medium heat. Add the garlic and cook for 1 minute until fragrant.

3. 3. Pour in the diced tomatoes with their juices and the vegetable broth. Stir in the oregano, basil, and red pepper flakes (if using). Bring to a simmer and cook for 5 minutes.

4. 4. Add the cooked penne to the sauce and toss to coat. Remove from heat and stir in the 1/2 cup parmesan.

5. 5. Serve the Mediterranean One Pot Pasta warm, garnished with fresh basil leaves and extra parmesan.

Notes

For extra creaminess, you can stir in a couple tablespoons of cream or half-and-half at the end. Leftovers keep well in the fridge for up to 4 days.
