Ingredients
– 1 lb ground beef
– 1/2 cup uncooked white rice
– 1 egg
– 1/4 cup chopped onion

– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 6 cups beef broth
– 1 cup diced carrots
– 1 cup diced potatoes
– 1 cup diced zucchini
– 1/4 cup chopped fresh cilantro
Instructions
1. – In a large bowl, combine the ground beef, rice, egg, onion, garlic, cumin, oregano, salt, and pepper. Mix well and shape into small meatballs.
2. – In a large pot, bring the beef broth to a boil. Add the meatballs and reduce heat to medium-low. Simmer for 15 minutes.
