Ingredients
– 1 tablespoon olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 teaspoons ground cumin
– 1 teaspoon chili powder
– 1 teaspoon dried oregano
– 1 (15-ounce) can pinto beans, drained and rinsed
– 1 cup vegetable broth
– Salt and pepper to taste
– Chopped cilantro for garnish
Instructions
1. 1. In a large skillet, heat the olive oil over medium heat.
2. 2. Add the diced onion and sauté for 2-3 minutes until translucent.
3. 3. Add the minced garlic and sauté for 1 minute, until fragrant.
4. 4. Stir in the cumin, chili powder, and dried oregano. Cook for 1 minute to toast the spices.
5. 5. Add the drained and rinsed pinto beans and the vegetable broth. Bring to a simmer and cook for 5 minutes, or until the beans are heated through and the flavors have combined.

Notes
For a creamier texture, you can mash some of the beans with a potato masher or the back of a spoon. This dish can also be made with black beans or kidney beans if preferred.
