Ingredients

– 8 ounces corn tortilla chips

– 1 cup red salsa

– 1 cup shredded Monterey Jack or cheddar cheese

– 2 eggs, fried or scrambled

– 1/4 cup sliced radishes

– 2 tablespoons chopped fresh cilantro

– 1 tablespoon crumbled queso fresco (optional)

Instructions

1. – Preheat your oven to 375°F (190°C).

2. – Spread the tortilla chips out on a large baking sheet.

3. – Pour the salsa evenly over the chips, making sure to coat them well.

4. – Sprinkle the shredded cheese over the salsa-coated chips.

5. – Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.

6. – Remove the chilaquiles from the oven and top with the fried or scrambled eggs, sliced radishes, chopped cilantro, and crumbled queso fresco (if using).

7. – Serve immediately while the chips are still warm and crispy.

Notes

– For extra flavor, you can add diced onions, garlic, or jalapeños to the salsa before baking.

– Experiment with different types of salsa, such as green salsa or a spicier version, to customize the flavor.

– Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
