Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 (15 oz) can tomato sauce

– 1 (15 oz) can diced tomatoes

– 1 tbsp chili powder

– 1 tsp cumin

– 1 tsp oregano

– Salt and pepper to taste

– 9 lasagna noodles

– 2 cups shredded Mexican cheese blend


Instructions

1. – Preheat oven to 375°F.

2. – In a large skillet, cook the ground beef over medium-high heat until browned and crumbled. Drain excess fat.

3. – Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes until softened.

4. – Stir in the tomato sauce, diced tomatoes, chili powder, cumin, oregano, salt, and pepper. Simmer for 5 minutes.

5. – Spread 1 cup of the beef mixture in the bottom of a 9×13 inch baking dish.

6. – Layer 3 lasagna noodles over the beef mixture.

7. – Spread half of the remaining beef mixture over the noodles, then top with 1 cup of shredded cheese.

8. – Repeat the noodle, beef, and cheese layers.

9. – Top with the remaining 3 lasagna noodles and the last cup of shredded cheese.

10. – Cover with foil and bake for 30 minutes.

11. – Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

12. – Let stand for 10 minutes before serving.

Notes

For a creamier texture, mix in 1 cup of ricotta cheese with the beef mixture. You can also add sliced black olives or diced jalapeños for extra flavor.
