Ingredients
– 1 cup long grain white rice
– 2 tablespoons olive oil
– 1 small onion, diced
– 3 cloves garlic, minced
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1/2 teaspoon paprika
– 1/4 teaspoon oregano
– 1 (14.5 oz) can diced tomatoes
– 1 cup chicken or vegetable broth
– 1/4 cup chopped fresh cilantro
– Salt and pepper to taste
Instructions
1. – In a large skillet, heat the olive oil over medium heat.
2. – Add the diced onion and sauté for 2-3 minutes until translucent.
3. – Stir in the minced garlic and cook for an additional minute until fragrant.
4. – Add the uncooked rice and toast for 1-2 minutes, stirring frequently.
5. – Pour in the can of diced tomatoes and the broth. Stir in the chili powder, cumin, paprika, and oregano.
6. – Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, until the rice is tender and liquid is absorbed.
7. – Remove from heat and fluff the rice with a fork. Stir in the chopped cilantro.
8. – Season with salt and pepper to taste.

Notes
For extra flavor, use chicken broth instead of vegetable broth. You can also add diced bell peppers or jalapenos to the rice for more color and heat. The rice can be made ahead of time and reheated as needed.
