Ingredients
– 1 head of cauliflower, cut into florets
– 2 tablespoons olive oil
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1/2 teaspoon garlic powder
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper
– 1 lime, cut into wedges
– 2 tablespoons chopped fresh cilantro
– 1/4 cup crumbled cotija cheese
Instructions
1. 1. Preheat the oven to 400°F (200°C).
2. 2. In a large bowl, toss the cauliflower florets with the olive oil, chili powder, cumin, garlic powder, smoked paprika, and cayenne pepper until evenly coated.
3. 3. Spread the seasoned cauliflower on a baking sheet in a single layer.
4. 4. Roast for 20-25 minutes, or until the cauliflower is tender and lightly browned.
5. 5. Remove the cauliflower from the oven and transfer to a serving dish.

Notes
