Prepare to be captivated by the bold flavors of these Middle Eastern Tofu Kebabs! Juicy tofu cubes are marinated in a zesty blend of spices, then grilled to perfection alongside vibrant vegetables. This quick and easy recipe is a delightful way to enjoy a protein-packed, meatless meal.


Ingredients

– 1 block of extra-firm tofu, pressed and cut into 1-inch cubes

– 1 red bell pepper, cut into 1-inch pieces

– 1 yellow onion, cut into 1-inch pieces

– 2 cloves of garlic, minced

– 1 tablespoon olive oil

– 2 teaspoons ground cumin

– 1 teaspoon ground coriander

– 1 teaspoon paprika

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon cayenne pepper (or to taste)

– Juice of 1 lemon

– Salt and pepper to taste


Instructions

1. In a large bowl, combine the tofu cubes, bell pepper, onion, and garlic.

2. In a small bowl, whisk together the olive oil, cumin, coriander, paprika, cinnamon, and cayenne pepper.

3. Pour the marinade over the tofu and vegetables and toss gently to coat.

4. Cover the bowl and let the mixture marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

5. Preheat your grill or grill pan to medium-high heat.

6. Thread the marinated tofu and vegetables onto skewers.

7. Grill the kebabs for 10-12 minutes, turning occasionally, until the tofu is lightly charred and the vegetables are tender.

8. Remove the kebabs from the grill and drizzle with the lemon juice. Season with salt and pepper to taste.

9. Serve the Middle Eastern Tofu Kebabs immediately, garnished with fresh herbs if desired.

Notes

For a more substantial meal, serve the tofu kebabs with a side of cooked quinoa or rice. You can also use a variety of vegetables, such as zucchini, mushrooms, or eggplant, in addition to or instead of the bell pepper and onion.
