Ingredients
– 24 ounces high-quality white chocolate, chopped
– 1/2 teaspoon peppermint extract
– 1 1/2 cups crushed Oreo cookies (about 15 cookies)
– 2 tablespoons fresh mint leaves, finely chopped
Instructions
1. Line a baking sheet with parchment paper or a silicone baking mat.
2. In a double boiler or microwave, melt the white chocolate, stirring occasionally, until completely smooth.
3. Remove the melted chocolate from the heat and stir in the peppermint extract until well combined.
4. Fold in the crushed Oreo cookies and the chopped mint leaves, mixing gently to distribute evenly.
5. Spread the mixture onto the prepared baking sheet, smoothing it into an even layer.
6. Refrigerate for at least 2 hours, or until the bark is completely set.

Notes
For a more intense mint flavor, you can increase the amount of peppermint extract to 1 teaspoon.
