Ingredients
– 1 pound pork tenderloin, thinly sliced
– 2 cups thinly sliced cabbage
– 1 cup sliced mushrooms
– 1 carrot, julienned
– 3 green onions, sliced
– 2 cloves garlic, minced
– 2 tablespoons soy sauce
– 1 tablespoon hoisin sauce
– 1 teaspoon sesame oil
– 1/4 cup chicken broth
– 1 tablespoon cornstarch
– Salt and pepper to taste
Instructions
1. In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.
2. Add the pork and stir-fry until lightly browned, about 3-4 minutes. Remove pork from the pan and set aside.
3. Add the remaining 1 tablespoon of oil to the pan. Stir-fry the cabbage, mushrooms, carrot, and green onions for 2-3 minutes until vegetables are tender-crisp.
4. In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, chicken broth, and cornstarch. Pour the sauce into the pan and stir to coat the vegetables.
5. Return the pork to the pan and continue to cook for 2-3 minutes, or until the sauce has thickened and the pork is cooked through.
6. Season with salt and pepper to taste.
7. Serve immediately, either on its own or with steamed rice.
Notes
For a spicier version, add 1-2 teaspoons of chili garlic sauce to the sauce mixture. You can also substitute sliced chicken or shrimp for the pork.
