Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
– 2 cups long-grain white rice
– 1 large onion, diced
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 tablespoon paprika
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon cayenne pepper
– 1 cup chicken broth
– Salt and black pepper to taste
– Chopped fresh parsley or cilantro for garnish
Instructions
1. In a large skillet or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion and sauté for 3-4 minutes until translucent.
3. Add the minced garlic and sauté for 1 minute until fragrant.
4. Add the cubed chicken and all the spices (paprika, cumin, coriander, cinnamon, and cayenne). Stir to coat the chicken.
5. Pour in the chicken broth and bring the mixture to a boil.
6. Stir in the rice, cover the pot, and reduce the heat to low. Simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
7. Remove from heat and let sit, covered, for 5 minutes.
8. Fluff the rice with a fork and season with salt and black pepper to taste.
