Ingredients
– 1 lb ground beef
– 1 onion, diced
– 2 carrots, peeled and diced
– 2 potatoes, peeled and diced
– 2 cloves garlic, minced
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1 tsp salt
– 1/2 tsp black pepper
– 1 package refrigerated pie crust
Instructions
1. 1. Preheat your oven to 375°F (190°C).
2. 2. In a large skillet, cook the ground beef over medium heat until browned and crumbled, about 5-7 minutes. Drain any excess fat.
3. 3. Add the diced onion, carrots, and potatoes to the skillet. Cook for 10 minutes, stirring occasionally, until the vegetables are slightly softened.
4. 4. Stir in the minced garlic, dried thyme, dried rosemary, salt, and black pepper. Cook for an additional 2-3 minutes.
5. 5. Roll out one of the pie crusts and press it into a 9-inch pie dish. Spoon the meat and vegetable mixture into the pie crust.
6. 6. Roll out the remaining pie crust and place it over the filling. Crimp the edges to seal the pie. Cut several slits in the top crust to allow steam to escape.
7. 7. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
8. 8. Allow the pie to cool for 10 minutes before slicing and serving.
Notes
For a flakier crust, you can brush the top with a beaten egg before baking. If you prefer a thicker filling, you can add 1-2 tablespoons of all-purpose flour to the meat and vegetable mixture before adding to the pie crust. This dish can be made ahead and frozen for later use.
