Ingredients

– 1 1/2 cups graham cracker crumbs

– 5 tablespoons unsalted butter, melted

– 8 ounces cream cheese, softened

– 1/2 cup granulated sugar

– 1/4 cup honey

– 2 tablespoons chia seeds

– 2 cups fresh blueberries


Instructions

1. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined.

2. Press the mixture into the bottom and up the sides of a 9-inch pie plate.

3. In a large bowl, beat the cream cheese with an electric mixer until smooth and creamy.

4. Add the sugar and honey, and beat until well incorporated.

5. Fold in the chia seeds and 1 1/2 cups of the fresh blueberries.

6. Spoon the filling into the prepared graham cracker crust.

7. Top with the remaining 1/2 cup of fresh blueberries.

8. Refrigerate the pie for at least 2 hours, or until set, before serving.

Notes

For a variation, try using different types of berries or add a little lemon zest to the filling. This pie can be made ahead and stored in the refrigerator for up to 3 days.
