Ingredients
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1 tablespoon white sugar
– 1 1/2 cups milk
– 2 large eggs
– 1/4 cup unsalted butter, melted
– 1 pound pork sausage, cooked and crumbled
– 2 cups shredded cheddar cheese
– 3 cups whole milk
– 4 large eggs
– 1/2 teaspoon ground black pepper
Instructions
1. Preheat the oven to 375°F. Grease a 9×13 inch baking dish.
2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
3. In a separate bowl, whisk together the milk, eggs, and melted butter.
4. Pour the wet ingredients into the dry ingredients and stir just until combined.
5. Spread half of the pancake batter into the prepared baking dish. Top with the cooked sausage and shredded cheese.
6. In a medium bowl, whisk together the milk, eggs, and black pepper. Pour this custard mixture over the sausage and cheese.
7. Spoon the remaining pancake batter over the top.
8. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
9. Let cool for 5 minutes before serving.
Notes
For best results, use fresh, high-quality pork sausage. You can also try substituting different types of cheese or adding diced bell peppers or onions for extra flavor.
