Ingredients
– 2 cups all-purpose flour
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 6 tablespoons unsalted butter, chilled and cubed
– 3/4 cup cold milk
– 1 cup fresh peach puree
– 2 cups powdered sugar
– 1/4 cup milk
– 1 teaspoon vanilla extract
Instructions
1. – Preheat the oven to 450°F. Line a baking sheet with parchment paper.
2. – In a large bowl, whisk together the flour, baking powder, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
3. – Stir in the 3/4 cup of cold milk and the peach puree until just combined. Do not overmix.
4. – Drop the dough by heaping tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
5. – Bake for 12-15 minutes, or until the biscuits are golden brown on top.
6. – While the biscuits are baking, prepare the vanilla glaze. In a medium bowl, whisk together the powdered sugar, 1/4 cup of milk, and vanilla extract until smooth.
7. – Once the biscuits are out of the oven, drizzle the vanilla glaze over the warm biscuits, allowing it to drip down the sides.
8. – Serve the Peach Butter Swim Biscuits with Vanilla Glaze warm, and enjoy!
Notes
For best results, use fresh, ripe peaches for the puree. The biscuits can be stored in an airtight container for up to 3 days.
