These Peach Cobbler Cookies capture the classic flavors of summer peach cobbler in a soft, chewy cookie. Bursting with juicy peach chunks and warm spices, they make the perfect comfort food dessert or snack.
Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1 1/2 cups diced fresh peaches (about 2-3 medium peaches)
Instructions
1. – Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. – In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
3. – In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla until combined.
4. – Gradually stir the dry ingredients into the wet ingredients until just combined. Fold in the diced peaches.
5. – Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. – Bake for 12-14 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use fresh, ripe peaches. You can also substitute frozen peaches, thawed and drained. These cookies can be stored in an airtight container at room temperature for up to 5 days.
