Description

Ingredients

– 1 cup (240 ml) aquafaba (chickpea liquid)

– 1 cup (240 g) creamy peanut butter

– 1/2 cup (60 g) powdered sugar

– 1 teaspoon (5 ml) vanilla extract


Instructions

1. In a large mixing bowl, beat the aquafaba with an electric mixer until stiff peaks form, about 5-7 minutes.

2. In a separate bowl, whisk together the peanut butter, powdered sugar, and vanilla extract until smooth.

3. Gently fold the peanut butter mixture into the whipped aquafaba, being careful not to deflate the mixture.

4. Spoon or pipe the Peanut Butter Mousse into individual serving dishes or one larger serving bowl.

5. Refrigerate for at least 2 hours before serving, or until set.

6. Garnish with chopped peanuts, chocolate shavings, or a dollop of whipped cream before serving, if desired.

Notes
