Description

This Pear and Arugula Salad with Honey Vinaigrette is a refreshing and flavorful dish that’s perfect for a light lunch or a tasty side. The combination of juicy pears, peppery arugula, and a tantalizing honey-based dressing creates a delightful balance of sweet and savory.

Ingredients

– 5 cups baby arugula

– 2 ripe pears, sliced

– 1/4 cup olive oil

– 2 tablespoons apple cider vinegar

– 2 tablespoons honey

– 1 teaspoon Dijon mustard

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

Instructions

1. In a large salad bowl, combine the baby arugula and sliced pears.

2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.

3. Drizzle the honey vinaigrette over the salad and toss gently to coat the arugula and pears.

4. Serve the Pear and Arugula Salad immediately, garnished with additional pear slices or a sprinkle of chopped walnuts or pecans, if desired.

Notes

This salad is best enjoyed fresh, but any leftover vinaigrette can be stored in the refrigerator for up to 1 week. The salad also pairs well with grilled chicken or salmon for a heartier meal.
