Ingredients

– 8 ounces thin egg noodles

– 1 large onion, diced

– 3 garlic cloves, minced

– 1 teaspoon ground turmeric

– 1 teaspoon ground cumin

– 1/2 teaspoon ground cinnamon

– 6 cups chicken or vegetable broth

– 2 cups water

– 1 tablespoon tomato paste

– 1 lemon, juiced

– 1/4 cup chopped fresh parsley

– 1/4 cup chopped fresh dill

– Salt and pepper to taste

– Fried onions for garnish


Instructions

1. Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and set aside.

2. In a large pot or Dutch oven, sauté the onions in a bit of oil over medium heat until translucent, about 5 minutes. Add the garlic and spices and cook for 2 more minutes, stirring frequently.

3. Pour in the broth and water, then stir in the tomato paste. Bring the mixture to a simmer and let it cook for 10 minutes.

4. Add the cooked noodles to the soup and let them heat through, about 2-3 minutes. Stir in the lemon juice and fresh herbs.

5. Season with salt and pepper to taste. Ladle the soup into bowls and garnish with crispy fried onions.

Notes
