Ingredients
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 2 eggs
– 1 cup milk
– 2 cups diced fresh pineapple
– Vegetable oil for frying
– Powdered sugar for dusting
Instructions
1. In a large bowl, whisk together the flour, baking powder, and salt.
2. In a separate bowl, beat the eggs and then stir in the milk.
3. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the diced pineapple.
4. In a large skillet or Dutch oven, heat 2-3 inches of vegetable oil to 350°F.
5. Using a spoon or small ice cream scoop, carefully drop heaping tablespoonfuls of the batter into the hot oil.
6. Fry the fritters for 2-3 minutes per side, or until golden brown.
7. Remove the fritters from the oil and drain on a paper towel-lined plate.
