Ingredients
– 1 (8 oz) package cream cheese, softened
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1 cup shredded sweetened coconut
– 1 cup powdered sugar, for dusting
Instructions
1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan and set it aside.
2. In a large mixing bowl, beat the cream cheese and butter together until smooth and creamy.
3. Add the granulated sugar and vanilla extract, and mix until well combined.
4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the shredded coconut.
6. Spread the batter evenly into the prepared baking pan.
7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow the bars to cool completely, then dust the top generously with powdered sugar.
9. Cut into squares and serve.
Notes
For a more vibrant pink color, you can add a few drops of food coloring to the batter. These bars can be stored in an airtight container at room temperature for up to 5 days.
