Indulge in the flavors of Chicago with these Comforting Pizza Pot Pies (Chicago Oven Grinder Copycat) – a quick and easy homemade twist on a classic favorite!

Ingredients

– 1 pound pizza dough, store-bought or homemade

– 2 cups shredded mozzarella cheese

– 1 cup diced pepperoni

– 1 bell pepper, diced

– 1 onion, diced

– 1 teaspoon Italian seasoning

– 1/2 teaspoon garlic powder

– 1/4 teaspoon red pepper flakes (optional)

– 1/4 cup marinara sauce

Instructions

1. Preheat your oven to 400°F (200°C).

2. Roll out the pizza dough on a lightly floured surface until it’s about 1/4-inch thick.

3. Use a round cookie cutter or a knife to cut out 12 circles from the dough.

4. Grease a 12-cup muffin tin and press the dough circles into the cups, creating a small pie crust in each one.

5. In a medium bowl, mix together the mozzarella cheese, pepperoni, bell pepper, onion, Italian seasoning, garlic powder, and red pepper flakes (if using).

6. Spoon about 2 tablespoons of the filling mixture into each dough-lined muffin cup.

7. Top each pot pie with a small spoonful of marinara sauce.

8. Bake for 20-25 minutes, or until the crusts are golden brown and the filling is hot and bubbly.

9. Carefully remove the pot pies from the muffin tin and serve warm.

Notes

Feel free to customize the fillings to your liking, such as adding different types of cheese, vegetables, or meats. These pot pies can also be frozen for a quick and easy meal later on.
